There are more than 200 agriculture plant sepcies which bees collect the honey from in Bulgaria. Main kinds of species for honey collecting in Bulgaria are: acacia, lime tree, sunflower, lucerne, thistle, lots of herbs and other kinds of trees.

The normal shape of natural bee honey is crystalised. It depends of the kind of honey ? how many weeks needed to come crystalised. For example ? acacia honey needs the longest time for crystalising ? more than 12 months, but it?s not the same for sunflower honey ? it needs 3-10 weeks, depends of the concentration of sunflower contains.

Why does real honey crystalize?

[/et_pb_text][et_pb_text _builder_version=”4.14.4″ _module_preset=”default” global_colors_info=”{}”]

There are two main natural sugars – glucose and fructose. Fructose tends to remain dissolved, but glucose actually does have lower solubility and has ability to crystalize much easier.

Crystalization is different between the types of honey, depending on the nectar it was made from. It actually depends on the water content of it and the more glucose, the quicker crystalization will occur.
